Blueberry Freezer Jam
Freezer jam is a fantastic way to use up fruit and can be stored conveniently in your freezer.
Ingredients:
2 cups fresh blueberries
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
1 1/4 cups granulated sugar
2 tablespoons + 2 teaspoons (.875 ounces) fruit pectin
Method:
Place blueberries, lemon juice and cinnamon in a medium saucepan on low heat.
Mash the fruit to the consistency that you desire.
Slowly bring to the boil and add granulated sugar.
Continue to boil for 2 minutes, stirring occasionally.
Stir in the pectin, and bring to a full boil and boil hard for 1 minute.
Remove from the heat and transfer to canning jars or freezer containers.
Remember to leave a 1/2 inch space at the top.
Seal the jars/containers and let stand at room temperature until cool.
Additional Notes:
Add the flavour you enjoy to the dish, such as 1/2 tsp mixed spice.
Freezing Notes:
This can be refrigerated for up to 3 weeks or freeze for up to 6 months.
