Bacon and Cured Pork
This is how you freeze bacon successfully.
Preparation
Freeze fresh bacon. Vacuum packed bacon is ideal for freezing.
Packaging
Wrap Joints tightly in foil. Divide rashes into convenient sized amounts and wrap in foil. Pack steaks in bags, interleaving with clingfilm. These can then be placed in freezer bags which are dated and labelled.
Vacuum packed bacon can go straight into the freezer.
Thawing
Thaw small joints in the refrigerator for 24 hours or at room temperature for 8 - 12 hours. Small packs of bacon need to be defrosted for up to 6 hours in the refrigerator and 2 - 3 hours at room temperature.
Cook as soon as you can after thawing.
Storage Time
Smoked joints and rashers 2 months
Unsmoked joints 1 month
Unsmoked rashers and steaks 3 weeks
Vacuum packed bacon 5 months
