Ice cream
Do you love ice cream? I have always loved making ice cream, but when I found out I was intolerant to Dairy it was one of the first things I learnt to make dairy-free.
Preparation
Freeze as soon after purchase or after making.
Packaging
If you purchase catering size containers then it can be a good idea to decant them into usable sized containers.
Pack homemade ice cream into rigid containers. I often package into single portions.
Thawing
Do not allow ice cream to thaw. Make sure you have eaten it before it melts!
Ice cream should not be refrozen once it has melted.
Homemade ice cream may need to sit out or place in a refrigerator for a while to soften before serving.
Remember to return the cartons to the freezer once you have finished decanting your portion.

Homemade - 1 month
Commercial Frozen - 3 months
