Potato (roasted)

Roast Potato is my favourite kind of potato. Even more so once I realised I could freeze them. You can either freeze the leftovers or prepare them ready for roasting. Both versions are listed below. Why not make double the batch for a meal and freeze the extras for another day? This is how you freeze Roast Potato.

Roast Potato for the Freezer

Preparation

If you’re preparing roast potatoes specifically for freezing, hold back on seasoning. Seasonings and spices tend to change in flavour when frozen. Your potatoes may, therefore, have an off-taste, not because they’ve gone bad, but because of how they were seasoned.

Leave small and medium potatoes whole, but halve large potatoes.

Tip the potatoes into a large pan of cold salted water and bring to a boil.

Boil for 6 mins exactly, then drain in a colander and leave to steam-dry for a few mins.

Toss in the colander to rough up the sides.

Optional: transfer to a large bowl. Shake over the flour, and toss well to combine.

Spoon over some fat and toss to coat evenly.

Packaging

Lay the potatoes on a tray lined with baking parchment and freeze.

Once frozen, the potatoes can be transferred to a labelled and dated freezer bag for easy storage.

Make sure to release as much air as you possibly can before sealing.

Thawing

When ready to cook, heat oven to 200°C / 180° Fan / Gas Mark 6.

Pour oil into a baking tray and put it in the oven.

When the fat is sizzling, carefully add the potatoes, then roast for 25 mins.

Remove the tray, then increase oven to 220°C / 200° Fan / Gas Mark 7.

Turn over the potatoes and return to the oven for a further 40 mins until golden and crisp.

Storage Time

3 months

Left-Over Roast Potato for the Freezer

Preparation

Roast the potatoes as you normally would. Ensure they are cold before freezing.

Packaging

Flash freeze first as it stops the Potatoes from sticking together. Then pack in labelled and dated freezer bags or containers.

Make sure to release as much air as you possibly can before sealing.

Thawing

Cook as usual from frozen for up to 30 minutes.

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
