Salsify
This is how you freeze Salsify, Scorzonera, Oyster plant , Vegetable Oyster.
Preparation
Scrub the roots, and do not peel. Blanch for 2 minutes. Drain, cut into short lengths. Remove the skin and then leave to cool.
Alternatively boil until almost tender, peal and leave to cool.
Packaging
Pack in labelled and dated freezer bags or containers.
Thawing
Thaw in bags for 2 hours at room temperature
Alternatively, cook from frozen according to the recipe.
