Turnip
This is how you freeze Turnip.
Preparation
Trim off the tops and roots. Peel thinly and leave small ones whole and blanch them for 1 minute.
You can peel, dice and blanch the larger ones for 2 minutes.
Drain, cool off in iced water. Drain again and pat dry.
Alternatively, boil the turnip until tender. Drain and puree.
Packaging
Pack in labelled and dated freezer bags or containers.
Thawing
Boil whole and diced turnips from frozen for 5 to 10 minutes according to size.
Alternatively, thaw for 2 hours at room temperature. Heat in butter and add sugar to caramelise if you wish.
You can reheat the puree from frozen.
