Pork Chops with Apple and Rosemary
This is our standard family recipe for pork chops. A great recipe as we always have Rosemary growing in the garden and an apple in the fridge or freezer. If you have frozen the pork chops then take them out of the freezer to defrost before cooking. This can be cooked both in the kitchen and on the BBQ. Pork chops with apple and rosemary are both Gluten Free and Dairy Free and are delicious served with a mountain of green vegetables and mashed potato.
Serves 4
Ingredients:
4 pork loin chops
1 tbsp. apple juice or water
1 apple peeled and chopped
2 tbsp. olive oil
1 sprig or 1 tbsp. of Rosemary chopped
Sunflower oil
Salt and pepper
Method:
Mix 1 tbsp. olive oil (half of what recipe says), apple juice, apple and the rosemary into a bowl and mix together.
Season the pork chops with the salt and pepper to taste.
Heat 1 tbsp. olive oil and sunflower oil in the frying pan and cook the pork chops for 2 - 3 minutes on each side on a low heat.
Place the apple mixture into the frying pan and cook for a further 2 - 3 minutes on each side on a low heat. The apple should soften but keep its shape. Continue to cook on a low heat, turn the pork chops until cooked through.
You could eat them at this point but the children of the family like them crispy so:
Heat the grill to high and place the pork chops under so that they can get ‘crispy’ on the edges. Turn them and then remove when you are happy that they are done to your satisfaction.
Whilst the pork chops are under the grill you will find you have the delicious apple and rosemary still in the frying pan. Spoon this on to the pork chops as you serve.
Additional Notes:
Rosemary is one of my most favourite herbs, but this can be left out of the recipe or substituted for another if you prefer.
Freezing Notes:
Keep in a covered container in the refrigerator for up to 5 days.
Use the apple from the freezer for the recipe. It will defrost quickly when in the pan.
Ensure the pork chops are defrosted completely before cooking.
