Asparagus
Please remember the following instructions for freezing and storing asparagus:
Asparagus must be fresh in order to freeze successfully.
Preparation
Wash the asparagus and remove the woody stems. You can use the stems in soups or stocks.
Sort the asparagus into sizes of spears and blanch them according to their size:
- Small: 2 minutes
- Medium: 3 minutes
- Large: 4 minutes
After blanching, cool the asparagus in iced water, then drain and pat dry.
Packaging
Once the asparagus is cooled and drained, pack it in labeled and dated bags or containers.
Thawing
When you're ready to use the frozen asparagus, cook it for 5 minutes in boiling water if it's frozen. If you've thawed the asparagus, reduce the cooking time.
Storage Time
You can store the frozen asparagus for up to 9 months.
