Avocado
Freezing avocado is a great way to preserve this delicious and nutritious fruit. Although it’s not recommended to freeze whole avocados, you can freeze avocado slices or mash for later use in recipes such as guacamole, smoothies, or salads.
To freeze avocado slices, start by cutting the fruit in half and removing the pit. Then, slice the avocado flesh into small pieces and sprinkle them with lemon or lime juice to prevent browning. Next, arrange the avocado slices in a single layer on a baking sheet lined with parchment paper and place it in the freezer for a few hours until frozen. Once the slices are frozen, transfer them to an airtight container or freezer bag and store them in the freezer for up to 6 months.
To freeze mashed avocado, scoop the flesh out of the skin and mash it with a fork or a food processor until smooth. Add a teaspoon of lemon or lime juice per avocado to prevent browning. Place the mashed avocado in an airtight container or a resealable plastic bag, making sure to remove any air pockets. Label the container with the date and store it in the freezer for up to 6 months.
When you’re ready to use frozen avocado, simply remove it from the freezer and let it thaw in the fridge for a few hours or at room temperature. Frozen avocado may have a slightly different texture compared to fresh avocado, but it’s still a great addition to many dishes.
Preparation
Choose ripe, but not over-ripe fruit.
Cut in half - rub half with lemon juice. Wrap in foil and place in bag or container.
Dice or pulp the avocado after removing the skin - allow 1 15ml of lemon juice for each avocado to help prevent discolouration.
Packaging
Best packed into lidded rigid containers which are labelled and dated. Can be frozen as part of a dish.
Thawing
Leave in container and thaw for approximately 2 hours. If they are not used immediately then they will discolour.
Storage Time
2 months.
Avocados can be frozen successfully but be aware that they may lose the original flavour and texture. Be prepared therefore to use them in dishes rather than use them solely on their own. They are a fruit but I have placed them in both vegetable and fruit category so they can be found easily!
