Sweet Potato (yam)
This is how you freeze Sweet Potato (yam).
Preparation
Peel and cut into slices or rounds. Parboil, drain and leave to cool.
Alternatively peel, halve and boil until tender. Drain, cool in iced water, drain and pat dry.
Puree if you desire.
Packaging
Pack in labelled and dated freezer bags or containers.
Thawing
Thaw slices or rounds in containers at room temperature. Pat them dry and fry in butter or butter and sugar until caramelised.
Alternatively, fry from frozen.
You can reheat pureed sweet potato before serving.
