Avocado Chocolate Mousse
We are fortunate that where we live in Hong Kong we have an Avocado tree right outside our front door. What do you do with so many Avocadoes when your children don’t want to eat them? I simply made a chocolate mousse and served it up. Who can resist Chocolate right? I didn’t tell them until the end of the meal (and had asked for more).
Serves 2
Ingredients:
1 tbsp. milk (dairy free of course)
1 avocado
1 tsp water
2 tbsp. cacao powder
2 tbsp. honey or agave syrup or maple syrup
Pinch of salt (optional)
Method:
Simply combine all the ingredients in a food processor until smooth.
Taste and add more sweetener if you desire.
Divide between 2 dishes and chill in the refrigerator for at least 1 hour.
I serve this with fresh fruit.
Additional Notes:
The mousse can be stored in the refrigerator for up to 1 week.

Use frozen avocado in this pudding. Defrost and then follow the recipe before baking.
